Patxarana (or Pacharan) is a Basque liquor of fermented berries and anis flavoring that is served chilled. It’s a digestif (but go ahead and enjoy anytime). Pictured here is the owner of La Casa de los Quesos in Casco Viejo in the old town of Bilbao, and she makes and bottles her own. © 2013 Rob Hard
